Salvia Officinalis known as Common Sage is an evergreen herb in the mint family, it is light green and wooly in appearance. The plant was commonly grown in monastery gardens in Medieval England and was an essential ingredient in the anti-plague formula known as Four Thieves Vinegar. For this reason, and because the plant’s genus name literally means “to save,” the herb was often referred to as Sage the Savior in the 17th century.
In ancient times sage was used for blood and liver disorder, and respiratory illnesses.
Sage imparts a savory and mild peppery flavor to foods, such as chicken, fish, rice, and cheese.
